I don't often eat chips at home, they are something of a treat with a pie or a burger now and again. When I do, they obviously get spiced up a little! These are a favourite of mine, cajun spiced. They are really oven wedges as opposed to fries but hey ho, semantics.
Ingredients - serves 2 to 3
4 mid size potatoes
2 - 3 tbsps olive oil
3 tbsps Cajun Spice Blend
Method
Pre-heat the oven to 200c / 180c fan
Cut the potatoes into this wedges and pat dry with kitchen roll. I leave the skin on but this is entirely up to you! Tip into a large bowl.
Mix the cajun spice with the olive oil and then drizzle over the fries in the bowl. Give it all a really good shake so that everything is evenly covered.
Spread out on a non stick baking sheet and pop in the top shelf of the oven. Keep an eye on them after 20 minutes, give the tray a little shake to turn the fries and then pop back in for another 10 to 15 minutes. Careful not to let the burn.
Using olive oil at this temperature should give them nice crisp edges but be careful not to turn then into charcoal!
