Buffalo wings are one of my favourite naughty eats and this recipe is so easy you would be rude not to give it a go. I use either Shadow Tribe or Atcha for this but you can substitute for a non Parva Spices alternative, it just won't taste so good!
1.5kg chicken wings (or thereabouts)
100g plain flour
1 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/2 teaspoon salt
120g melted butter
100ml hot sauce - I use our own Shadow Tribe or Atcha
Put the flour, cayenne pepper, garlic powder and salt into a resealable plastic bag and shake well to mix.
Use kitchen roll to pat the chicken wings as dry as possible and then add to the bag of flour. Seal and toss well to coat the wings thoroughly. Leave in the fridge for an hour.
Pre-heat your oven to 190c. Place the chicken wings on a wire rack on a baking tray and cook for 25 minutes, turning over half way through.
Whilst they are cooking melt the butter gently in a saucepan before adding your hot sauce and mix well.
Take the wings out of the oven and use a pair of tongs to place them in the hot sauce / butter mixture, do this one at a time. Swirl the sauce around to coat each wing as much as possible before placing back on the wire rack.
When they are all coated in the sauce pop them back in the oven for 10 to 15 minutes until cooked through.
They'll need to cool for a few minutes before you dig in otherwise you will burn both fingers and tongue. They can be eaten hot or cold but I can never wait long enough to let them cool.
