Keep the big kids and little kids happy with these superbly tasty, relatively healthy, oven baked nuggets. The trick to the crunch is all about pre-toasting the bread crumbs and the superb batter to stick the crumbs to.
Ingredients - serves 4
300g Panko breadcrumbs
3x chicken breasts - cut into nugget shapes & sizes
2x eggs lightly beaten
2x tablespoons Cajun seasoning
3x tablespoons half fat mayo
Method
Heat the oven to 200c. Spread the breadcrumbs out evenly on a baking sheet and pop in the oven for 3 minutes (until they are golden). Tip into a bowl and set aside.
Mix together the ingredients for the batter - lightly beaten eggs, mayo and Cajun seasoning. This should be nice and gloopy, and very sticky! Using a pair of kitchen tongues dip the nuggets one by one into the batter coating them well, then dip into the toasted breadcrumbs and place on a baking tray.
Once you have coated all of the nuggets in the batter and breadcrumbs pop them in the oven and bake until their core temperature reaches 67c - about 18-20 minutes.
These can be served with a healthy salad or indulgent triple cooked chips - entirely up to you! Additionally, they really benefit from a dip on the side - I use hot sauce but you can use mayo or ketchup as desired.
