If you are looking for a really easy side dish that is bursting with flavour, try this Korean spinach dish. It usually forms one of the layers in a Bibimbap sitting alongside spiced cucumber, soya beans, marinated daikon and marinated bean sprouts, but trust me this is a wonderful accompaniment with any meal. I like to make a big box up at the start of the week and have as a healthy snack or put it with various lunches. You can add it to pasta with some pine nuts and olive oil for a tasty lunch.
200g spinach 3/4 tablespoon salt
2 tbsp finely chopped leek 1 tbsp sesame oil
Sesame seeds for sprinkling
Parboil the spinach quickly in boiling water. Rinse in cold water a few times and using a rolling pin or your hands squeeze out as much water as you can. Cut into thin slices and marinate with the salt, leek, sesame oil. The salt is really important but don’t worry if you overdo it, you can rinse again. Sprinkle with sesame seeds. Serve after about 20-25 minutes.
