This is a really tasty, (relatively) low calorie lunch, perfect for lunchboxes too as it is good cold.
Ingredients - Serves 4
200g cooked king prawns
100g cherry tomoatoes, cut in half
1/2 a cucumber
Small bunch spring onions, sliced finely on the diagonal
1 green chilli, finely chopped (I retain the seeds but feel free to discard)
100g spinach leaves (use any greens you prefer)
2 or 3 small radish, sliced thinly
Zest & juice of 2 limes
30g roasted nuts - I used cashew but anything that gives bite is good
3 -4 nests of egg noodles
4 - 5 tablespoons of Sweet Chilli Sauce - I use Parva Spices funnily enough
Prepare the noodles according to packet instructions - usually boiled for about 4 minutes. Rinse under water, drain, rinse again and place in a bowl. Cut into shorter, bite size lengths.
Slice the cucumber into strips and add to the noodles with the prawns and other chopped veg - tomatoes, onions, chilli, leaves
Mix together the lime zest, juice and sweet chilli sauce and use to cover the noodles. Mix thoroughly. Place in bowls with roasted nuts on top.
