This is a really good midweek supper recipe, easy, tasty and economical. You can change the curry powder to your own tastes but I wanted to stay true to the Ethiopian inspired heat of this dish.
Although the curry powder packs a punch the addition of coconut milk helps temper the heat. If you are a heat lover just increase the amount of chilli powder.
