Panch Phoran literally means '5 spices' and is commonly used throughout Eastern India and Bangladesh. The five spices in question are Nigella seeds, Fenugreek seeds, Cumin seeds, black mustard and Fennel seeds all of which are left whole, never ground.
The mix is suitable for an array of applications. Commonly used as the base flavour in Bengali cooking it is just as good when being used to add deep and aromatic flavour to everyday vegetable, lentil or rice dishes. Try dry roasting or tempering in oil or ghee before coating and steaming broccoli, cauliflower, Brussels sprouts or adding to your roast potatoes.
