As with Garam Masala there is no definitive blend of the North African spice mix. Each spicery, family and region would all create their own version based on various factors including availability, taste and tradition. Having travelled throughout Morocco I have re-created our best findings into our very own Ras el Hanout.
Perfect for use in lamb tagine recipes as well as making a magnificent BBQ marinade when combined with either a little olive oil and lime juice or mixed with some natural yogurt, perfect on lamb kebabs.
Ingredients: coriander seeds, ground ginger, fennel seeds, ground cinnamon, cloves, black peppercorns, chilli powder, turmeric, cardamom pods, mace, allspice and nutmeg.
