Our Sambal Hijau is an intensely aromatic and flavoursome sambal that bursts with freshness on the palate despite the chilli content. Packed with green chillies, fresh coriander and fresh mint the immediate taste is crisp and bright, something akin to an Asian mint sauce, it is an obvious accompaniment to lamb and chicken dishes but works wonders with vegetables as well.
The flavours are evocative of both Indonesia and Southern India, particularly Tanjore in Tamil Nadu (now known as Thanjavur). I discovered this sambal whilst backpacking around South East Asia on a shoestring and basically begged the chef for the recipe (pre-internet days kids!) thankfully he was more than happy to share it and now it is my pleasure to share it with you.
Ingredients: Green chilli peppers, rice wine vinegar, garlic, ginger, brown sugar, rapeseed oil, coriander, mint, sea salt
