This is one of my favourite vegetarian dishes, simple in execution but exceptionally tasty! This is also on the milder side of things, if you'd like to go hotter simply add a chopped fresh chilli when you re-heat.
The addition of coconut milk lends itself nicely to jasmine rice but this can be enjoyed with basmati as well, totally up to your own preference.
