La Kama is a predominantly Moroccan spice mix but not anywhere near as complex as Ras el Hanout. La Kama consists of just five spices mixed together which are usually cinnamon, ginger, nutmeg, black peppercorns and turmeric - a mix that works particularly well with chicken and lamb dishes. The best known use for La Kama would be in the pulse heavy Maghrebian soup, harira, but adding it to any soup or pulse dishes is common too, try it in a dal.
