This is a rather special South Indian curry with clean and fresh flavours created by fresh coriander and mint leaves, oh and it has a real fiery kick! Unlike British Indian Restaurant curries this has very little 'gravy' - I describe it as a dry curry - but there is a small amount of nutty sauce.
The chicken is marinated, roasted and finished off with a green spice paste and boiled cashew nut sauce. Serve with basmati or flatbreads.
